His father was also the proprietor before him; 1704 - Beerbrewer

Death - his name is crossed out on his birth record and on the birth
records of children. His death not recorded in death register, only on his birth record. A paragraph in birth record indicates a "horrible thing" happened.

Lisbeth Zahawi helped with the translation of the following:

Apparently, Caspar ended his "disgraceful and corrupt life" by
stabbing himself in the throat and then putting a rifle to his lower
jaw. This was a suicide, and as such was considered a mortal sin in
those days. The person would not have been given a Christian burial.
Therefore, his name would not appear in the death record.

I cannot find any hint in the church records of Rosenfeld as to what drove
Caspar Jaeger to take his own life. However, in the civil records is the following:

Ohne Datum finden wir wenig später: "Große
Klage betrifft Biersieder Jäger "Luderwürthauß".
Um schnöden Gewinnes willen
lasse er alles zu, was Gott und eine hochfürstliche
Kirchenordnung verboten hätten. Alldort
würden viel tausend Flüche gehört, ohne jegliches
Rügen, Dekretiert wird, daß deswegen
eine Schwörbüchse zu eröffnen sei. (Randbemerkung:
ist aber niemalen was darein gefunden
worden) Zu allein kommt noch des Wirtes
skandalöses Aus- und Einfahren vor der Predigt.
Er entschuldigt sich mit den Soldaten.
Die Sach wird verschoben".1017

Per Lisbeth Zahawi:

In the above passage we hear that Hans Ulrich Jaeger was also a beer brewer and that his establishment had a very bad reputation. For financial gain he allowed anything forbidden by God or the law. Swearing was so rife that he was ordered to put up a tin in which people had to put money for their swear words ( Comment: there was never anything in it). There was also his scandalous behaviour of “leaving and coming back” before the sermon.

As to the term Luderwürthauß : Luder nowadays is a bad insult but for women only, something like bitch. There is also a verb “verludern lassen” meaning letting things go to ruin. Whatever it meant at the time and in Balingen, it was not good.

Würdt nicht gehalten : The verb halten here means “keep, observe” as in keeping a promise, an oath, an order, a law. It has nothing to do with halting or stopping.”

Note:
Caspar Jaeger, son of Hans Ulrich Jaeger, also owned the same tavern. The above paragraph may go a long way toward explaining Caspar’s suicide in 1721.

I looked through the church films, but I don't think I am any closer to solving the problem of the paternal ancestors of Sebastian Stotz (1644-1728).

The Rosenfeld Family Register has the following: Eltern (parents of) Sebastian Stotz b. 26.7.1644:
 Hans Martin Stotz m. 28 Aug 1638  + (died) 22.10.1662, age 49 [born abt. 1613]
 Maria Renner                               + (died) 15 Jun 1682, age 82 [born abt. 1600]

The register information appears to have been added some time after the date of the original entries, and is in a different script.

First of all, Maria Renner would have been 13 years older than Hans Martin Stotz. Secondly, she would have had Sebastian when she was 44 years old, not unheard of, but it would be very unusual.

I found the marriage of 28 Aug 1638. In that marriage it does state that the father of Hans Martin is Pancratius Stotz, and that Pancratius is deceased. 

I do agree that Pancratius Stotz is deceased, as he died 9 Oct 1635.

However, in the early records I could not find the birth of Hans Martin Stotz, or even just Martin Stotz, with a father Pancratius Stotz. I searched from 1600-1625. The only ones I found were these three:

Martin Stotz b. 15 Aug 1617 to Georg Stotz and Anna
Martin Stotz b. 17 Mar 1617 to Jacob Stotz and Ursula
Martin Stotz b. 4 Feb 1612 to Stoffel (Christophorus) Stotz and Anna.

Martin Stotz, b. 4 Feb 1612, married Anna Ruoff, 11 Nov 1638. He died 4 Jan 1644, shot by cavalry men. He had 3 children, none of which was a Sebastian. I looked for a possible additional child, named Sebastian, born after his death, but I found none.

I have no further information on Martin Stotz, b. 17 Mar 1617. He may have died young, but there are no death records before 1629, and his death is not recorded on his baptism record. He may also be the Hans Martin Stotz, above, who marries in 1638, but then the father is in error, being Jacob, and not Pancratius.

If the father is Jacob Stotz, the trail runs cold at that point, as I can't link him back to Martin Stotz, b. 1540.

In the same year, there is the Martin Stotz, b. 15 Aug 1617. He may have died young, but there are no death records before 1629, and his death is not recorded on his baptism record. He may also be the Hans Martin Stotz, above, who marries in 1638, but then the father is in error, being Georg, and not Pancratius.

At the moment, unless some other information comes to light, I am going with Georg as the father of Martin (Hans Martin) Stotz.
