It took a while, but I eventually found the marriage registration for Andrew WEATHERSTON & Elizabeth PALMER -
they were married in the December Qtr. of 1864 in Norham, nr. Berwick, Northumberland.
On finding this and the birth registrations for their children, it was soon obvious that the 1881 England Census
transcription is slightly wrong in the spelling of their surname - I had been looking for WEATHERSON;
I should have been looking for WEATHERSTON.
Andrew & Elizabeth's marriage certificate presents more questions than answers:
Andrew WEATHERSTON, Post Messenger and Shoemaker of Norham, Berwick on Tweed, married Elizabeth PALMER,
Nurse, of Wooperton, Glendale, on 15 November 1864 at the United Presbyterian Church, Norham in the District
of Berwick.
Andrew's father was Robert WEATHERSTON, occup. Shoemaker.
Elizabeth's father, Stephen PALMER's occupation was given as"Engineer in Agricultural Implement factory".
There is no indication if he was present at the marriage as he didn't sign the register.

On the 1881 U.K. Census [RG11 Piece 5020 Folio 8 Page 12] we find Andrew, Elizabeth, their 4 children
and Elizabeth's father, Stephen PALMER, living at King Street House & Shop, South Shields, Durham

Thanks to a WEATHERSTON descendant of this family, I now have the 1871 England Census entry for Andrew & Elizabeth.
They were living in Well Square, Tweedmouth, Northumberland:
