How do I research my Chinese ancestry??

My gggrandfather was Cheong Shin Hun born c1834 in Canton, China. I know nothing more of family background, ie parents etc and would dearly love to find out more, and continue my research. Where to now?? How do I find out more?? He arrived in Australia approx 1859 and called himself James Shanhun.
