Lee is the most common last name in China. Its literal meaning is "plum." It was the last name of the royal house in the Tang Dynasty(~1000AD). You might check with some of the Lee ancestral associations around the world. I know that they are active in most Chinatowns in the U.S.
It is possible that Chee could be the last name but it is most likely the given name.
