Not aware of a surname called Hing; it is quite a common given name meaning happiness. In all probability your ggf's surname is Chan which is a common Chinese surname; in Mandarin it is Chen. : My great grandfather was born near Guangzhou about 1871. He lived in London (Hackney) when he married my great grandmother in 1898. They had several children, one of whom was my grandmother Edna Hing. He went by the name Charles Hing in England. He died in Hong Kong in 1926 and is buried in Aberdeen Cemetery. Any connections out there? Is Hing the surname or Chan? I don't quite understand how Chinese names work. Thank you for any information.
