Placerville, CA: Try the US census approximately when your gggf was there, like 1860/1870 etc. Usually, genealogy society libraries will have census on microfilm and also volunteers who help you.

Monterey, CA:Try Sandy Lydon, Chinese Gold:The Chinese in the Monterey Bay Region." 1985, ISBN 0-932319-01-7. I believe this book may cover your relative's period. On page 441 is the mention of Ah Hing. Yours?

Also,try historical, research, university, Asian American Studies libraries. Ask your local reference librarian.
(Tuolumne HIstorical Society Library for Placerville. Also, city directories.
