On Sut Kam

My Chinese grandfather,(born in Hawaii), was referred to as On "Sut" but no records that I have show "Sut", was that just an endearment, maybe, to show respect or something of that nature? Family insists that "Sut" was one of his names. I'm confused, has anyone else run across this name before?
