Update: I believe Soto is the Hokkien (Fujian) dialect pronunciation of the double Chinese surname Situ (Mandarin or Szeto/Seto/Seeto (Cantonese).
: I have seen a grave plaque with the surname "Soto" in Roman script. In Chinese script it is shown as Du4. You can see this character at this site: http://www.webcom.com/ocrat/chargif/surnames.html. It is shown on the 5th line and is the 3rd charater from the right. Unfortunately, I cannot explain how "Soto" came from this Chinese surname. Hope this helps.
