
Eugenia's Zucchini Bread
Ingredients:
3 eggs
1 c. oil
2 c. sugar
2 t. vanilla
2 c. zucchini, grated
3 c. flour
2 t. baking soda
1 t. salt
1/2 t. baking powder
1 T pumpkin pie spice
chopped cherries
Mix dry ingredients together in a bowl. In another bowl mix together oil, eggs, sugar, vanilla, zucchini, and any other desired ingredients (see variations). Pour into greased loaf pans. Bake at 350 degrees for 1 hour. Makes 2 loaves.
Variations:
If you do not have pumpkin pie spice you may use 1/2 t. cinnamon and 3/4 t. nutmeg. You may also add 1 c. raisins, 1 8 oz. can crushed pineapple, 1 c. chopped nuts. The original recipe called for these ingredients. Some family members did not care for nuts, pineapple or raisins so I removed them. I have also added a bag of semi-sweet chocolate chips on occasion for the chocoholics in the family.
