Res/ Weil für den Bílowizer Bräuer an Seite des Magistrats und bürgerlichen Ausschusses 10 mit den mehresten Stimmen ausgefallen. p.411: Dem neüen Bräuer Zwierzina ist bedeutet worden daß Selber gegen Caution per 400Fl für einen Bräuer dergestalten jedoch aufgenommen seie, daß so ferne er in einer Malversation betretten werden sollte, oder kein gutes Bier bräuen würde, ohne weiterer vierteljähriger Fristkündigung des Dienstes werde entsezet werden.

Translation of the above extract from the minutes of the Uherské Hradišté town council meeting of 15 November 1782.

p.379: Esteemed Heßla hands the test batch of beer [made] by Zwierzina, the brewer from Billowiz (missing text) be left [behind locked?] doors; the test batch of beer was, actually, not found to qualify.
p.407: The entire Citizens' Committee stepped forward and declared that they will stand by their votes cast for the new brewer.
After this, the Magistrate's side voted.
The esteemed royal Judge reminded that the voice of esteemed Böhm was alien to his thinking since B�hm had outlined that the brewer from Bilowiz not only made 7 metzen more of a [brew] (but also?) (...missing part...) To take, so as
p.408: not to get into the same embarrassing situation as it happened with Heil. Esteemed Heßla confirms the embezzlement of a bag of malt, but this brewer had said that he hid it only to make a better test batch, because he had made a bigger batch of brew.
[Resolution] Because the vote by the Magistrate and the Citizens' Committee was in favor of the Bilowiz brewer by 10 votes, he is to be taken on with a bond of 400 Gulden, with the caveat that if he brews bad beer, or is involved in corrupt behavior, he will be released without notice.
p.409: However, since the Citizens' Committee gave him a majority vote despite the fact that he was guilty of improper behavior during the making of the test batch, the Citizens' Committee will have to be responsible for the brewer in addition to the bond he is to post, and the Esteemed Director of the Brewery should exercise better control than he had in the case of Heÿl, so that the community would not again come to harm; and the Citizens' Committee is to provide recommendations for procedures and is to submit these forthwith.
p.411: The new brewer Zwierzina was informed that he would be employed as brewer against a bond of 400 Gulden with the understanding that if he should become guilty of corrupt behavior, or not be able to make good beer, he would be dismissed without the [usual] one quarter year's notice.
In response this brewer reported that the Citizens' Committee had promised him that he would be employed against a bond of 300 Gulden, and in consequence he did not know (text missing from photocopy)...
p.412: To post a bond within 14 days because, first of all, other applicants have offered similar and even larger bonds, and because the concern is to not only to be covered against the [possible] spoilage of the brew, and the possibility of corrupt behavior, but also such things as incurred beverage tax penalties.
This is to be communicated to the Citizens' Committee with the addition that in the case such bond has actually been provided, it is to be turned over so it can be invested to earn interest. (Ref. Hl Grimar).
Source: The original documents show no date, but Dr. Coupek of the Uherské Hradišté archives in his letter dated 9 February [1998] (item 4 on fggdoc243-2) provides the dates as used in the main text. Since these dates appear to be in the wrong sequence, inasmuch as the "test" should have taken place before the meeting in which the hiring was decided, one of the dates could be incorrect. Dr. Coupek is citing the source as "Stadtprotokoll, Inv. Nr. 284 - a meeting of the town council 15 Nov 1782". (The "Inv. Nr.284" would be an internal catalog number of the Uherské Hradišté Archives). The photocopy shows page number 407).
