CORA'S OLE TIME AGO SAUSAGE


Try and think back to the late 1940's when we had real grocery meat markets. Grocery stores that you could get real meat fixed the way you wanted it.

MY MOM USED THE FOLLOWING:
2 pounds of fresh bulk sausage, with all the seasonings that made it just a liitle hot to the taste.
1 pound of ground lean hamburger meat
Mix the sasuage and hamburger meat well together make into about 1 inch patties
Cast Iron Skillet with a small amount of lard in it heating place the patties in the skillet and cook over medium heat-oh the wonderful smell. Cook until browned but not hard. remove from skillet and place on a brown grocery sack to drain.

GRAVY


Drain all but 3-4 tablespoons of lard[grease] out of the cast Iron Skillet
Place skillet back on stove burner. Add 3-4 Tablespoons Flour and salt and pepper to your taste. Lightly brown the flour mixture.
Add 1 small can pet milk diluted with water. Stir It slowly and cook slowly until It reaches the desired thickness. Serve Hot.



WORLD WAR II PIMENTO CHEESE


1 CupPet Milk
1 large pimento cut in small pieces
3-4 tablespoons of mayonnaise or salad dressing
1 pound of grated of medium cheddar cheese grated
Salt and pepper to your taste.
Heat milk in double boiler add cheese stir until blended well
Place in bowl with lid and place in ice box. Cool and should be very creamy and smooth

OLD TIME BUTTER MILK PIE


1 -9" unbaked pie shell
1/2 cup oleo
2 cups sugar
3 eggs well beaten
1 cup buttermilk
3 rounded talespoons flour
1 teaspoon vanilla flavoring
nutmeg dash
Have oleo soft, add sugar and mix well. Add flour, eggs and beat well. Stir in buttermilk vanilla flavoring add dash of nutmeg.Mix well pour into unbaked pie crust and bake 45-50 minutes 350 degree oven , or until knife blade inserted in pie comes out clean. Be sure an place on a baking sheet.


ESTELLE'S QUICK CHOCOLATE ICE BOX PIE


1 box instant chocolate jello pudding/pie mix
2 cups sweet milk
1 box instant chocolate pudding i use jello brand
3 packets equal [ diabetic in family]
1 ctn of 6 mini graham cracker crust
1 carton cool whip
Mix jello pudding with milk and beat with electric mixer until becomes slightly
thick.
Put in the mini graham cracker crust and cover with wax paper and place in ref.
When ready to serverve cover with cool whip and drizzle a little chocloate ice cream syrup on top.enjoy.

MEAT LOAF


1 -2 Pounds of lean hamburger meat
1 package meat loaf seasoning
salt &pepper to your taste
1 packet plain instant oatmeal
1 egg well beaten
2 tablespoons chopped red bell pepper
2 talblesppons finely chopped red onion.
1 small can tomato sauce
2 Tablespoons ketchup
Mix meat, meat loaf seasoning. salt &pepper and instant oatmeal together add egg and bell pepper and onion. Mix well Place in baking dish cover with tomato sauce and add 2 tablesppons ketchup on top of meat loaf. Bake 350 degrees for 30-35 minutes drain any excess grease off.
NOTE
You can add spaghetti on both sides of meatlof and cover with the tomato sauce. add salt &pepper. good one dish meal. try it.

ROCKY ROAD FUDGE BROWNIES


1 -19 ounce package brownie mix
1cup chopped pecans
3 cups miniature marshmallows
2 [1 ounce] squares unsweetened chocolate
1/3 cup milk
1/2 cup butter or margarine
1[16 ounce] package powdered sugar, sifted
1/2 teaspoon vanilla extract.
Prepare brownie mix acording topackage directions. stir in pecans Spoon batter into greased 13x9x2" baking pan.Bake 350 degrees for 25 minutes .Remove from oven and sprinkle marshmallows over hot brownies. Combine choco;te 1/3 cup milk and butter into heavy saucepan.Cook over low heat until chocolate and butter melt. stirring often. Remove from heat. transfer to mixing bowl.Add powderd sugar and vanilla and beat at low speed until smooth. If frosting is too stiff add a little milk-1 tablespoon at a time stirring till smooth Spread over brownies, cool in panon wire rack and cut inot bars. Make 1 dozen.

MEXICAN ROAST
3-4 Pound roast fat trimmed
1 pound dry pinto beans
1 onion chopped
1 can chopped green chili peppers
3Tbsp. chili powder
salt and pepper to taste
garlic powder to taste.

Use an oven proof baking dish with a TIGHT fitting lid. Sprinkle salt and pepper and garlic powder all over roast. Layer beans, then roast, then add all the other indgredients. Cover with water.Bake 12 hours at 225 degree oven with lid on.When done tear roast apart mix well with beans and serve on flour tortillas with sour cream, chives, and grated cheese of your choice, any salsa of your choice. Enjoy.

 

RECIPE FOR HAPPINESS

PECAN PIE BARS


2cups all purpose flour
1/2 cup sugar
1/3/ tsp salt
3/4 cup butter or margarine cut up
1 cup firmly packed brown sugar
1 cup light corn syup
1/2 cup butter/or margarine
4 large eggs lightly beaten
2 1/2 cups finley chopped pecans
1 teaspoon vanilla extract.


Combine flour, sugar, salt, in large bowl, cut in 3/4 cup butter mix with pastry mixer until mixture resembles very fine crumbs.press evenly into a greasef 13"x 9" pan using a piece of plastic wrap to press the crumbs in pan. Bake at 350 degrees for 17 to 20 minutes. or until lightly browned.


Combine brown sugar, corn syrup, and 1/2 cup buttr in saucepan, bring to boil over medium heat, stirring gently, Remove from heat Stir in one fourth of hot mixture into beaten eggs;add to remaining hot mixture and stir well rfemove from heat and stir in pecans and vanilla. mix well. pour filling over crust Bake 350 degrees for 34-35 minutes ot until set.Cool completely in pan on wire rack.Cut into bars. Yield: 16 large bars.

2 MINUTE HAWAIIAN PIE


1 (5.1. Ounce instant vanilla pie pudding and pie filling
1 ( 20 ounce) crushed pineapple in heavy syrup undrained
1 (8 ounce) container sour cream
1(9 inch) graham cracker pie crust
In large bowl, combine vanilla pudding mix, undrained crushed pineapple, and sour cream into a crust cover with saran wrap and chill 2hrs

Pinto Bean Casserole

1 Large Package Tortilla Chips

2 Cans Pinto Beans [rinsed and drained]

1. Large can whole kernel corn[ drained]

1 can diced tomatoes [drained]

1 can tomato Sauce 8 oz.

1 Envelope Taco Seasoning

2 Cups Shredded Cheddar Cheese

Combine Tortilla Chips and Sprinkle into grease 13x9x2 baking dish combine beans, corn, tomato sauce, and taco seasoning. Mix well pour over chips and sprinkle cheese.


Bake uncovered at 350 degrees 20 -25 minutes

 

Corn Casserole

2cans cream style Corn
1 can whole kernel corn [drained]
1 small onion finely chopped
1 stick of oleo slivered
Jalapeno Peppers to suit YOUR taste
Salt and pepper to taste
1 box jiffy corn bread mix---cooked and broken into pieces
2 T. Sugar
1 cup shredded cheese of your choice

Cook Cornbread according to pkg. directions, Lightly grease casserole dish put corn, onion, jalapeno peppers chopped finely, and add onion , salt and pepper, stir well add one half of the shredded cheese, and torn up cornbread into dish . Bake 350 degree oven for 35 minutes, add remainder of cheese and let the cheese melt.

BARBECUE BEEF PATTIES

1 egg
½ cup barbecue sauce
¾ cup of crushed corn flakes
1 tsp salt
½ tsp black pepper
1 pound of lean ground beef

Combine Egg, and ¼ cup of corn flakes, salt and pepper and beef. Mix well and make patties into ¾ " thick make 4 patties and place in a greased casserole dish and bake uncovered 375 degrees for 35-40 minutes brush with the rest of the barbecue sauce while cooking

BAKED PORK CHOPS

4 pork shops ½ inch thick
4 onion slices ¼ inch thick
1 bottle chili sauce
4 -1/4 slices of green bell pepper

Brown Chops in pan and place in a grease 9" square basking dish place the chops in the dish and add one slice of onion , and 1 slice of green bell pepper , add the entire bottle of chili sauce Bake 350 degree oven for 30 minutes or until juice is clear Finger licking good.

BREAD PUDDING

6 ½ slices of French bread -break into bite size pieces
3 eggs well beaten

1 cup sugar or 1 cup equal
2 cups milk
2 table spoons vanilla flavoring
1 cup chopped raisins
1 cup chopped pecans
½ stick of oleo slivered
2 Tablespoons cinnamon less if you do not really like cinnamon.

Heat oven to 350 degrees. Lightly grease 6 inch round baking dish at least 3 inches deep. Add the bread that has been torn in small pieces, add milk, sugar, eggs, ad vanilla, and pecans, sliver one half of the stick of oleo over the mixture. Bake till done stir once or twice during cooking note this will appear a little soft after it has cooked let stand 15 minutes before serving may pour warm chocolate ice cream syrup over or ice cream of choice, or just plain.

 

TEENAGER DELIGHT

1Pkg. pasta spirals
1 lb. ground beef
1 jar spaghetti sauce
1 small chopped onion
1 can mixed vegetables

Cook pasta and set aside, brown hamburger meat and onion. Add all other ingredients
Cover and simmer 10 minutes.

EASY CRUNCHY SALMON PATTIES

1 small can pink salmon
1 egg

½ c minced onion

½ c flour

1 ½ tsp baking powder

1- 1/2/ cup cooking oil

Salt and Pepper to taste

Dash garlic salt

Drain salmon set aside 2 Tablespoons of the juice

Mix salmon, egg, and onion until sticky, stir in flour and baking powder to salmon juice stir well into mixture. Form small patties and fry till golden brown. About 5 minutes.

CROCK POT HOT FUDGE CAKE

1 pkg chocolate cake mix
1 [8 oz] sour cream
1 cup milk chocolates
1 cup water
4 eggs
¾ cup vegetable oil
1 pkg. instant chocolate pudding


Spray crock pot with Pam; mix ingredients by hand. Cook on low 6-8 hours Serve warm with ice cream or whipped cream.

FORGOTTEN COOKIES

¾ cup sugar
1 c chocolate chips
1 tsp. vanilla
2 egg whites
1 cup chopped nuts [ I use pecans]


Preheat oven to 350 degrees. Beat Egg whites, until stiff, gradually add sugar, and fold in nuts and chips. Line a large cookie sheet with non sick foil. Put in oven and turn oven off. Forget until oven is COMPLETELY cold.
