
~ Mama's Cobblers of All Kinds ~
INGREDIENTS:
5 ripe peaches, washed, peeled, pitted, & sliced (or simply use canned sliced peaches in heavy syrup, 16 oz. can)
DIRECTIONS:
1. If cooking fresh peaches, put enough water on peaches to cover. Add about 2/3 cup sugar or less and a dash salt. Cook on medium until tender and water is a little like syrup.
2. If using canned peaches, simply spray 8 x 8 x 2 inch metal or glass pan lightly with oil, and just dump peaches in it.
3. Preheat oven to 375.
4. In medium-sized bowl, wisk 1/2 cup flour, 1/2 cup sugar, and 1/2 cup milk until thin and smooth. Batter may be doubled if using 32 oz. can peaches and using 13 x 9 x 2 inch pan.
5. After pouring cooked or canned peaches in pan, then pour batter on top of peaches. Sprinkle top with about two tablespoons sugar. Then, dot with butter here and there.
6. Bake about thirty minutes or more depending on oven. Cobbler is done when dough is light golden color.
7. Top with vanilla ice cream or Cool Whip if desired but delicious without extras.
The dough will come together in clumps and brown on the top while peaches stay mostly on the bottom. It's easy to double and delicious with other fruits like blueberries, strawberries, and apples, too. We love peach best. 1/2 cup White Lily self-rising flour
1/2 cup sugar (plus 2/3 cup extra if cooking fresh peaches)
1/2 cup 2% Mayfield's milk
1 or 2 tablespoons butter or favorite margarine
Cool Whip or ice cream, optional topping
