
~ Hoecakes ~
INGREDIENTS:
1 box "Jiffy" Cornbread Muffin Mix produced by Chelsea Milling Company, Chelsea, MI
2 tbsp. oil (I use Filippo Berio extra virgin olive oil for baking and frying.)
1/2 cup Mayfield's milk (I use 2% to reduce fat.)
1 small or medium egg
1. Simply follow directions for cornmeal pancakes as listed on box.
2. For ease in removal and speed in cooking, I use a table-top non-stick electric griddle and make batches of six at a time.
Hoecakes disappear fast at our house! You can forget all other hoecake recipes with lots of steps and ingredients. This is the easiest, fastest, and best recipe I've ever tried!
