
~ A Delicious Meatless Recipe ~
3 large fresh bell peppers (1 orange, 1 yellow, 1 red)
[NOTE: This makes four or five servings depending on how hungry you are!]
DIRECTIONS:
1. Line large bread pan with aluminum foil to eliminate clean-up. Wash, dry, and cut peppers in halves. Remove stem, seeds, and pithy white ribs. Put peppers cut-side down on aluminum foil.
2. Set oven to broil. Broil peppers until skins are charred; set aside to cool. Peel charred skins from cooled peppers. On cutting board, cut peppers into thin strips lengthwise. (julienne)
3. Use directions on box to boil noodles until tender.
4. Dice garlic.
5. After noodles are tender, melt butter in large skillet. Then add garlic and sautee a couple of minutes.
6. Add peppers in skillet and salt and black pepper to taste. Stir and sautee until hot.
7. Drain noodles; then, add noodles to skillet and stir. Add more salt and black pepper to taste.
8. When steamy hot, serve in warm bowls which help retain heat. Sprinkle shredded Parmesan cheese as desired. (Substituting grated instead of shredded Parmesan does not suit this recipe.)
INGREDIENTS:
1/2 stick butter (I use Land 'O Lakes 1/2 fat butter.)
1/2 box rotini noodles (8 ounces)
4 or 5 cloves finely diced garlic (I use dried.)
shredded Parmesan cheese (I always use DiGiorno.)
salt & black pepper to taste
