According to Larry Hoefling <[email protected]> of the Surnames: What's In A Name? web site gives the origins as:

Sobek is a Polish diminutive form of the Czech surname Sobota, derived from the given name Sobéslav, which in turn comes from the elements "take for oneself" + "glory".  Sobiech, Sobieski, Sobanski, Sobinski, and Sobalski are Polish cognates.  Diminutive forms include Sobotka (Czech);  Sobek, Sobczyk, Sobieszek (Polish).  Occasionally, Sobota is derived from the Polish and Czech word Sobota = Saturday, the name given to the man who was born, baptized, or converted on a Saturday.

There seems to be a Czech dispute with the above:

A Polish diminutive of the Czech surname SOBOTA?  Sobota is really Saturday. The genesis of sobota: it comes from the Latin sabbatum, which comes from the Hebrew. sabbat.  By the way, the same origin has the German word Samstag in Oberdeutsch, which comes from Sambaztag, which comes from Sabbatstag, which in turn comes from sabbatum.

  1. from first name SOB-ìhrd (who is proud of himself), or
  2. from the first name SOB-éslav ( who glorifies himself),
  3. from a pronoun SOBECký - selfish,
  4. from a noun SOBA = osoba - person.
