Hummingbird cake

This is a recipe from Alicia's grandmother:)

3 cups all purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon soda
1 teaspoon ground cinnamon
3 eggs, beaten
1 1/2 cups salad oil
1 1/2 teaspoon vanilla
1 (8-ounce) can crushed undrained pineapple
2 cups chopped pecans
2 cups chopped bananas

Combine dry ingredients in a large bowl...add eggs and salad oil...stirring until dry ingredients are moistened.....DO NOT BEAT....Stir in vanilla, pineapple, pecans and bananas.....spoon batter into 3 well greased and floured 9" pans.....Bake at 350 degrees for 25 to 30 minutes......cool in pan 10 minutes.

 


Frosting: Cream Cheese Frosting

2 (8-ounce) packages of cream cheese
1 cup butter
2 (16 ounce) packages of powder sugar
2 teaspoons milk

Mix all together and frost cakes

Beer Battered fried shrimp ( devined with tails intact)

2 lbs peeled large fresh shrimp
1/2 cup flour
1/2 cup corn starch or corn meal
1/2 teas salt
1 can beer
1/4 cup melted butter
2 eggs
veg oil

Mix altogether, dip shrimp into batter few at a time. Fry at 375 degrees until brown, drain, serve. Good with cocktail sauce you can substitute corn meal for the cornstarch. Make sure equal amounts of flour and corn meal are used. Dip twice for good coverage.

Ben's Stroganoff

Ingredients

6 tb butter
2 1/2 lb. beef top round; cut in -strips,
1 1/2 X 1/2"
3 tb all-purpose flour
2 onions; thinly sliced
1/2 lb. mushrooms; sliced
1 clove garlic; minced
1 1/2 c beef broth
2 ts Dijon mustard
salt and black pepper; to -taste
1 1/2 c sour cream

Instructions

In a large heavy skillet, heat 3 tablespoons of the butter over medium-high heat. Dust beef lightly with flour and brown in the skillet on all sides; transfer to a plate. Reduce heat to medium and add remaining 3 tablespoons butter, the onions, mushrooms and garlic. Cook 5 minutes, or until onion is golden, stirring constantly. Add broth and mustard and bring to a light boil, stirring constantly. Return beef to the skillet and add salt and black pepper. Reduce heat to low, cover and simmer 15 minutes, or until beef is cooked through and liquid is slightly reduced. Stir in sour cream , heat until just hot. Serve immediately.

Serves 6-8.


Ben’s Catfish Fry

 Skin catfish, soak in chilled water. ( cleaned fish)

In plastic zip lock bag put equal amounts of corn meal and flour. Add lemon pepper, Louisiana Cajun seasoning, nature’s seasons, salt and pepper. Shake water off fish portions or filets. Put in bag zip and shake .... make sure fish is well coated. Place in hot skillet with about 2 " hot oil, fry at least 10 mins on each side until fish is done, its done when its flaky with a fork and crisp on the outside. Also good with bass, or any pan fish.


Ben’s Noodles Stroganoff

Ingredients:

(6 servings)
1/4 c Butter or margarine
1/4 c Sliced scallions or onions
1 Garlic clove; minced
1/2 lb Mushrooms; sliced
1 lb Ground beef
3 tb Lemon juice
3 tb Burgundy or other red wine
1 can beef consomm�
1 ts Salt
1/4 ts Pepper
4 oz Medium egg noodles
1 c Sour cream
Snipped parsley

Instructions:

In hot butter in skillet, saut� scallions, garlic and mushrooms until lightly browned. Add beef; cook, stirring, until red color disappears. Stir in lemon juice, burgundy, consomm�, salt and pepper. Simmer, uncovered, 15 min. Stir in uncooked noodles. Cook, covered, 5 min., or until noodles are tender. Mix in sour cream; heat quickly but do not boil. Serve at once, sprinkled with parsley.
