Pop’s World famous Oyster Dressing

Pop's Dressing

amounts depend on how many servings are desired, so adjust to the size of the turkey. this is enough to stuff a med sized turkey. Remember oyster dressing cannot be kept long as a left over.

Note from POP make sure the oysters are fresh. pick out the biggest one and eat it raw.

3-4 loaves bread, crumbled and semi dried.

2-3 chopped onions

1 stalk chopped celery

2 cans chicken broth

2 containers of oysters,chopped in 1/2

3-4 eggs

poultry seasoning

parsley

sage

salt, pepper

1 stick oleo melted

In separate pan heat 1 can chicken broth, add onion and celery and cook until partially done, not crisp anymore.

pour over bread in large mixing pan ( large pot does fine) add spices to your taste, combine and spice again. add veg mix, add oysters with broth,add eggs, mix with hands until very moist, if need more moisture, add other can of chicken broth. keep seasoning to your taste. pop likes it very sagey while others do not. stuff turkey, put rest around turkey in baking dish. - if making regular dressing, omit the oysters, if making the oyster dressing as a side dish with regular dressing ( some dont like the oysters) just add oysters to amount of dressing, dot with butter and bake for about 30 mins on 350 degrees. you can adjust this to your liking... its the holidays enjoy !


Old-Fashioned Popcorn Balls

Yield: 4 Servings

Ingredients

4 qt popped popcorn; (16 c.)

3 c karo syrup

4 tb butter

Instructions

Pop popcorn and measure it into large mixing bowl. Pour syrup in pan and stir until it come to a boil. Continue stirring until it forms a hard ball in water. Take off heat. Mix margarine into syrup. Pour over popcorn.

Butter hands and shape into balls when the syrup is cool. Wrap individual popcorn balls in waxed paper. Makes 12 large popcorn balls.


Pop’s Secret Chili

1 package of Rick Fowlers 2 alarm chili mix

2 cans rotel tomatoes and chilies

3 cans tomato sauce

1 tbs. sugar

sprinkle of chili powder and cumino

salt, pepper

3lbs cooked, drained hamburger

1 LB dried kidney beans, cooked

2 strips chopped bacon

1 med onion chopped

cook hamburger, drain, and set aside

cook kidney beans with bacon and onion, until tender.

mix all ingredients adding 2-3 cans of water. cook until mixture is thick, stirring frequently to prevent sticking. usually takes a couple of hours on med - low heat.

Mom’s version - put corn chips( fritoes) on plate or bowl

add shredded lettuce, chopped tomato, and chopped onion

add chili and top with grated cheese.


Pop’s jazzed up chicken

Tony chicatories Cajun spice-----1 tbs.

natures seasoning-----1tbs

salt

pepper

1 cup beef bullion

4 tbs. dried onion flakes

1/2 cup butter melted

1/2 cup picante sauce

mix well, heat, brush 1/2 on chicken pieces - he uses wings and legs.......... bake at 350 degrees for 30 mins.

turn, brush with rest of mix

cook another 20 mins

increase heat to 375 - bake 10 more mins.

enjoy.

good with baked potatoes and creamed corn, mix with corn - 1/4 cup chopped bell pepper red or green, parsley, salt, pepper, and 1tbs sugar and 3 tbs. oleo.

also throw in a toss salad. It’s not too spicy but if you like it spicy sprinkle on hot sauce as you bake the chicken


Potato Salad

2 1/2 lbs cooked, peeled, cubed potatoes

1 stalk celery chopped

4 boiled eggs chopped

1 onion chopped

1 - 1/2 cup miracle whip mayonnaise, use you judgment on amount to add.

1/4 cup mustard.

1/2 cup chopped pickles

parsley

garlic salt

natures seasonings

add together adjust taste to your liking, Pop likes it with a little vinegar added for a tart taste. - mix it the way you like it.


Potatoes

Oven fries - cut potatoes length wise into four wedges. put on cookie sheet. drizzle with melted oleo. sprinkle with salt pepper and paprika and parsley. cook about 30 mins at 350 degrees until brown and tender.

Twice baked potatoes

Bake a regular sized baking potato until done. cut into 1/2. scoop out pulp, reserve the shell. in small bowl mix potato with parsley, salt, pepper, and shredded cheese top with pat of butter. return to oven or microwave and heat until oleo is melted and cheese is done.


Pork or Beef Schnitzle

as best as i can remember - its been awhile

either use a thin pork chop deboned and beaten out

or a section of round steak tenderized.

sprinkle meat with wine vinegar

dust and pat with flour, salt, pepper and natures seasonings, cook in hot skillet with small amount of oil, turning frequently until done.

or you can use an egg, milk mix and finely crumbled cracker crumbs for a crusty outer layer. dip twice to ensure coverage then cook.


Pop’s smothered steak

1 large sweet onion sliced

1 can mushrooms

2 pkgs. brown gravy mix

2 tenderized steaks - such as round - tenderize with meat beater and cut into serving size portions. sprinkle with accent on both sides.

dust with flour, salt and pepper

fry about 3 -4 mins until brown on both sides in a little oil. drain off oil.

mix 2 pks brown gravy mix with water as directed. pour in electric skillet over steaks. top with onions, mushrooms, salt and pepper. cook on low heat for 1 hour until very tender.

if using fresh sliced mushrooms, saut� with the steak. drain off oil. this is easily chewed. also good with tenderized pork chops.


Cole Youngs spam salad

Cole was a good friend of the family, he was quite a character. This was his favorite dish.

1 can shredded spam

1/2 cup chopped onion

1 cup chopped celery

6 hard boiled eggs

1/2 cup pickle relish or chopped pickles

Miracle whip mayonnaise amount to taste

dash of salt, pepper and parsley

1/4 cup shredded cheese - med sharp cheddar is good

mix all above, chill and make sandwiches. it has a unique flavor.

YOU can also add ham, chicken, or turkey to the same base for variety of sandwiches.

 


Sunflowers

 

per serving - 1 boiled egg shelled and quartered into 4-6 pieces.

2 strips crisp bacon

1 tbs. mayonnaise

place egg slices as petals of a flower. add mayonnaise as center of flower.

add bacon as stem and 1/2 piece for each leaf

its one way to get the small ones to eat breakfast !!!!!

 


Tuna Casserole

 

Cook noodles in buttered salted water, drain and rinse.

add according to how many servings you desire

1-2 cans oil pkg. tuna, drained

1-2 cans mushroom soup

1-2 cans mushrooms

1 cup melted cheese ( use velveeta melted with milk and butter)

mix altogether and bake at 350 for about 25 mins.

chopped onion can also be added.

Turkey and Kraut

this was handed down from Aunt Mary’s mother whom lived in Lativia, and escaped before the Russians took over the country in WWII . It had a fancy name long forgotten but the dish stays with us.

Layer Bavarian Saurkraut with sliced left over turkey meat. cover with chicken broth, salt, pepper, and dot with butter. cook at 350 degrees for 30 mins. the kraut turns into a sweet flavor and adds zest to the turkey.
