Apple Crisp

School cafeteria - lovington New Mexico

This was Gma Kennedy’s favorite. The ladies brought it to her at least once a month after she retired.

4 1/2 cups brown sugar

3 cups flour

2 1/2 cups oleo

2 # 10 cans apples drained,

Cinnamon

Nutmeg

Pumpkin pie spice

Spray 2 med size 1" deep pans

Pour apples in, dust with spices

Combine mix with fork until mixed well, press over apples

Can be used in shallower dish to be more crispy

Place on larger sheet pan to avoid spilling, boiling over.

Bake 375 for 45 mins.

 


Lil’s BBQ sauce

(Lil was a good friend of Gma's)

2 tbs. chopped onion

1 tbs. fat (bacon or such, even oil will do)

1 cup catsup

2 tbs. vinegar

1/4 cup lemon juice

3 tbs. worchestire sauce

2 tbs. brown sugar

1/2 tsp. salt

1/2 tsp. pepper

Mix well; baste on meat as cooking over grill. Good on steak.

 


Floyd’s blackeyed peas

(Floyd was a good friend of Gma's)

Shell kettle full of peas, add 1-2 chopped med onions, 5 cut up strips bacon or ham hock. Cook until done. If using ham hock remove before serving, trim off meat and put back in beans. Serve with corn bread - mexican corn bread pkgs. are good here. Add salt and pepper while cooking - oh add some jalapeno seeds too.

 


Broccoli Cheese casserole

Place chopped broccoli in baking dish, top with cheddar cheese soup adding 1 cup milk for each 2 cups soup, depending on how much broccoli is to be cooked. Cover broccoli with milk and soup mixture bake at 350 degrees for 30 mins until bubbly and broccoli is done.

 


Laverne's Candied Yams

2 1lb cans sliced apples

1 1b whole sweet potatoes

Mix 2tbs honey, 2-tsp. cinnamon, 2tbs butter, 1-cup brown sugar. Mix bake in casserole dish for 30 mins.

Deer Meat Chili

Yield: 1 Servings

Ingredients

4 lb chili cut deer meat

1/2 ts oil

1 can tomatoes with chilies

water as needed

2 mdm chopped onions

1 3-4 stalks celery, chopped

-fine (optional)

1 chili powder to taste

1 cumin to taste

1 salt and pepper to taste

1 lg can tomato paste

1 cooked rice

Instructions

Brown meat in a well seasoned black cast iron Dutch oven. Remove all of the water in the meat. Add oil to meat and brown onions and celery. Season to taste with chili powder, cumin, salt, and pepper.

Add tomato paste rest of ingredients except rice, and cook until tender. Serve over rice.

Soak cuts of deer steak in milk with ice for an hour. This removes some of the

Beat with tenderizer until tender and flat

Pat with flour combination and fry with small amount of oil until brown, good with fried onions.

In bowl, add flour, salt, pepper, natures seasoning and meat tenderizer as Adolph’s or accent.

The cuts of meat can also be coated with milk, egg, mix and finely crushed cracker crumbs. Fry until done.

 


FRIED PORK CHOPS

INGREDIENTS:

8 pork chops 3/4 inch thick

salt

black pepper, freshly ground

2 cups all-purpose flour

vegetable oil

paprika

1) Trim the excess fat from the edges of the pork chops. Sprinkle them generously with salt and pepper.

2) Season the flour generously with salt and pepper. Dredge the pork chops in flour until coated on all sides. Shake off any excess flour. Pour enough vegetable oil into a heavy deep skillet (cast-iron is perfect) to fill it to 1 inch. Heat over medium heat to 375�F. (A small cube of bread dropped in the oil will brown in about 30 seconds.)

3) Add only as many of the pork chops to the skillet as will fit without touching. Cook them, turning them once, until cooked through (no trace of pink remaining in the center) and deep golden brown, about 12 minutes. Use a long-handled fork or tongs to prevent getting splattered.

4) Remove the pork chops from the skillet to drain. Sprinkle them with paprika and serve hot.

 


Fruit Pie Salad

1 can cherry pie filling

1 ctn. whipped topping

1 15 oz can drained pineapple chunks

1 can eagle brand milk

Chopped pecans

Mix all above and chill overnight. Any kind of pie filling can be used.

 


Ethel’s Garlic Bread

 

Slice long loaf of french bread. Dot each slice with butter leaving loaf intact - as in don’t slice clear through. Melt 1 stick of butter, drizzle over top. Sprinkle lavishly garlic salt, parsley and Italian seasoning if desired. Use more or less melted butter to taste. Wrap in foil bake at 350 degrees about 15 mins until bread is toasted on top.

This is excellent with spagetti ........ or other Italian foods.

 


German Pea Salad

Thaw a 10 oz pkg. of frozen peas under cold running water. Combine 1/4 cup sour cream, 4 strips crisp cooked crumbled bacon, 1 chopped green onion, 1/4 teas. Salt and pepper. Add peas serve at room temp.

Sprinkle with grated cheddar cheese if desired.

 


Spiced Holiday Nuts

1 egg white

1 tbs. water

3 cups nuts, walnuts, pecans etc.

1/4 cup sugar

Salt

1 tsp. cinnamon, cloves, nutmeg

Beat egg white and water till foamy, stir in nuts coating well. Combine remaining ingredients; sprinkle over nuts, till evenly coated. Spread on lightly greased pan bake at 300 degrees for 30 mins stirring frequently. Makes 3 cups.

 


Lemon Creme

1 can eagle brand milk

2 egg yolks

2 lemons

mix above, add to graham cracker crusts bake at 325 for 30 mins......... chill...... serve cold. (guessing at time cooked so watch it ).

 


Onion and Cottage Cheese Super Dip

to one container of cottage cheese add 1 envelope of lipton onion soup mix.... stir and use as dip.... excellent

 


Potatoes Au Gratin

4 cups thinly sliced potatoes

1 cup med sliced onion

1/4 teaspoon salt

1 (10 0z) can cheddar cheese soup

1/2 cup milk

1 tbs. Worcestershire sauce

Arrange potatoes, onions, salt in layers in casserole dish. Repeat 3 times. Heat soup, sauce, and milk in saucepan pour over potato mixture. Cover and bake in preheated 375 degrees oven, 45 mins. Uncover and bake 15 mins longer. Variation

Use less onion, sprinkle with grated cheddar cheese before cooking the second time.

 


Pumpkin Bread

This originally came from Gma Barnes but is best remembered cooked by Gma Kennedy who baked it in coffee cans.

3 cups sugar

4 eggs

1 cup cooking oil

mix these

add 1 can pumpkin mix well

sift together or mix together

3 1/2 cups flour

1tsp cinnamon

1 tsp nutmeg

1 tsp baking soda

1/2 tsp baking powder

add to rest of mixture, blend in 1 cup nuts - pecans, walnuts - broken.

put in

4 1b coffee cans greased and floured, fill 1/2 with batter. bake 325 degrees for 55 mins until straw comes out clean.

****this can be baked in a cake pan - or pans, greased and floured, or sprayed and floured, ck with tooth pick when it comes out clean, it is done it will also separate from the edges of the pan.

 


SPICY PUMPKIN CAKE

Add 1/2 t soda to spice cake mix. Blend and mix first addition of water. Then eggs. Then 1 cup pumpkin instead of the last addition of water. Add raisins, nuts, pumpkin pie spice, nutmeg, cinnamon, or dates. Bake at 350.
