The chef is messy but the food is great!

Crab and Rice

Cook 4 cups minute rice.

Add parsley, salt and pepper

1 can crab meat drained

1 can bean sprouts drained

1 med onion chopped

1 stalk celery chopped

1 can bamboo shoots or water chestnuts (optional)

Soy sauce

Cook in skillet with a little melted butter until onions are done. Add rest of ingredients and soy sauce, stir and fry to blend flavors. Serve with brown gravy. You can use canned shrimp also or fresh boiled crab meat, enough to make 1 cup or so. This was cooked in Monterey Calif. where we often went crabbing and processed our own fish.

James Pimento Cheese

1 sm. jar drained pimentos

1 cup miracle whip mayonnaise

2 cups shredded cheddar cheese

Add together, chill, and serve as a sandwich. This is James favorite sandwich.

 

Jim’s Spaghetti

3 lbs hamburger, cooked, drained, and chopped

2 med. chopped onions

1 pkg. sliced fresh mushrooms

2 cloves minced garlic

Saut� the onions and mushrooms in a little oleo

Mix with the meat.

Sauce:

For each can of tomato sauce used add 1-tsp. sugar to cut down on acid.

2 large cans tomato sauce

1 can tomatoes with chilies

1/2 cup finely chopped bell pepper

Italian seasoning to taste

Garlic salt to taste

1 can sliced tomatoes

Mix above with meat and simmer slow for a couple of hours, adding water or tomato sauce as needed until the taste suits you and the mixture is rather thickened.

Cook spaghetti noodles in boiling, buttered salt water until done, rinse .

Either serve on the side with sauce or combine and simmer until flavors are well blended. Sprinkle with Parmesan cheese garlic salt and enjoy... this is the way his Mom remembers his cooking the dish.

 


Jim’s flavorful Lemon baked Salmon

4 salmon steaks

1/2 cup melted oleo or butter

Lemon pepper

Paprika

Lemon wedges

Place steaks in a baking dish, pour butter over fish, add spices, cover with aluminum foil. Bake at 350 for 10- 15 mins until fish flakes and is done. Serve with lemon wedges. Lemon juice can also be sprinkled on fish before baking.
