Apple and Pear Pie

1 pie shell (with lattice top)
1/4 cup icing sugar
4 apples, peeled, cored, and thinly sliced
2 ounces raisins

rind of 1/2 lemon
1/2 teaspoon cinnamon, ground
4 pears, peeled, cored, and thinly sliced
2 ounces fresh butter, diced


Line a pie plate with the pie shell.

Sprinkle with half the sugar.
Add the apples, raisins, and lemon rind; sprinkle with cinnamon.
Cover with pears.
Sprinkle with the other half of the sugar and cover with diced butter.

Top with a lattice made of strips of pastry.

Bake in a preheated 450� oven for 10 minutes, then reduce the temperature to 350� and bake another 30-40 minutes.

Apples were grown in New France since they started growing food. Quebec haut cuisine has merged flavours to create this delicious uniquely Canadian taste treat. A family favourite that is beyond compare.
