~ Recipes from the kitchen of Gladys Jennette Scarborough ~

Kinnakeet, North Carolina

Fried Corn Bread

Ingredients: 1 C. Corn Meal,  1 tsp. baking powder, 1/4 C. flour, 1 tsp. salt, Water or Milk, Vegetable oil

What to do: Mix corn meal, flour, salt and baking powder. Stir in enough water or milk to get a thin (pancake like) consistency. Heat frying pan, cover bottom with oil, when hot, drop batter by tablespoons in pan. Cook until brown on one side, then turn and brown the other side. Drain on paper towel.  More oil may be needed as cooking.

 

~ Stewed Fish With Corn Meal Dumplings ~Kinnakeet style

Ingredients: 1 blue fish, mullet, or channel bass, 3 T. salt pork, cubed, 3 or 4 potatoes cut in half,  1 lg. onion cut up, 1/2 c. sliced green onion, 2 T. flour, 

Corn Meal Dumpling Ingredients (Dodgers):

1 c. corn meal, 1tsp. salt, 1/4 c. flour, water

What to do: Steak fish into 2 inch pieces. Do not fillet. In heavy pot fry salt pork pieces until brown, sauté onion for a minute add flour and stir. Then add fish, potatoes  and onion and enough water to barely cover fish.  Bring to a boil and drop dumplings around sides and sprinkle green onion on top. Cook until potatoes are done and gravy has stewed down. 

Dumplings:  Mix ingredients with enough water to hold together. Roll into balls and flatten.

 

Recipes of Gladys Jennette Scarborough

~ Boiled Fish With Pork Chips ~ 

Ingredients:

 Sea Trout or similar textured fish, split & cut into 4 pieces, salt, 2 T. diced salt pork, 1 sm. onion, chopped, 3 or 4 med. potatoes 3 or 4 sliced green onions

What to do: Sprinkle salt on all sides of fish and let set for at least 2 hours. Place in boiling water to cover with potatoes and simmer together until potatoes are done. Fry salt pork in a little oil until crisp, add onions and let this cook a few minutes. Lift fish out of water carefully with slotted spoon to platter with potatoes. Cover with green onions. Pour over the onions and drippings or serve on the side with baked corn bread.
