Lazy Pierogi Casserole (Italian style)

Here is a recipe that I prepared for the first time this week. I know that to purists this may be a "sacrilege" as it's based on an Italian dish, but my husband really enjoyed it -- better than the pierogies he used to have when visiting Winnipeg (which may have actually been Ukrainian). Anyway, here it is:

  • Lasagna noodles: 12
  • Cottage cheese: 2 cups
  • Eggs: 1
  • Onion Salt: 1/4 tsp
  • Grated med. cheddar cheese: 1 cup
  • Cooked mashed potatoes: 2 cups
  • Salt: 1/4 tsp
  • Onion Salt (2nd amt.): 1/4 tsp
  • Pepper: 1/8 tsp
  • Butter: 1 cup
  • Onions: 1 cup


  1. Cook noodles as directed on the package.
  2. Drain.
  3. Line the bottom of a 9x13-inch pan.
  4. In a medium-size bowl, mix the cottage cheese, egg and first amount of onion salt.
  5. Spoon over noodles. Cover with a layer of noodles.
  6. In the same bowl mix cheddar cheese with potato, salt, onion salt and pepper.
  7. Spread over noodles. Cover with another layer of noodles.
  8. Melt butter in a frying pan, saute onions slowly until clear and soft.
  9. Pour over noodles. Cover.
  10. Bake 30 minutes in 350 deg oven. Let stand 10 minutes; serve with sour cream. Makes 8 large servings.
