Placki - Potato Pancakes
From: Irena Wojcik Gabon, Mississauga Ontario Canada
Ingredients:
  • 4 baking potatoes peeled and cut into 1 inch chunk put in bowl cover with cold water DRAIN before using)
  • 1 medium onion cut into 8 pieces
  • 1 beaten egg
  • salt
  • pepper
  • 1/4 cup flour

Preparation:

  1. In food processor put in 1/3 of the potatoes and onion Pulse on/off 6 times
  2. Add remaining potatoes and onions, salt and pepper. Pulse on/off 6 times then let the machine run for about one minute, check the consistency. and to make sure potato is all broken up.
  3. Transfer to a bowl
  4. Add the flour then the beaten egg
  5. Mix this with wooden spoon.
  6. Batter will be loose
  7. Preheat your frying pan then
  8. Add about 1/4 inch oil
  9. When it starts to sizzle drop the
  10. Soup ladle full into frying pan
  11. Don,t turn over until brown or they will get ucky
  12. Put into a dish that has paper towels to abosorb the fat.
  13. Repeat the oil first then add second batch as potatoes absorb the oil.
You can serve these with sour cream or apple sauce. Whichever.you prefer. These do not taste good the next day.
