Parkin


Parkin is a light cake made of flour, sugar, ginger and spices.

The texture is not so heavy as gingerbread.

Parkin is traditionally eaten at Bonfire Night, the 5th of November.

Recipe #1 : Ingredients

Method #1

  1. Mix flour, spices, and bicarbonate of soda
  2. Add the oatmeal
  3. Melt the fats and the golden syrup together, and blend into the mixture
  4. Add enough boiling water to make a stiff dough
  5. Roll out to a thickness of ¼-inch and cut into rounds
  6. Bake in a medium oven until dark brown

Recipe #2 : Ingredients

Method #2

  1. Mix flour, sugar, golden syrup, ginger, and bicarbonate of soda
  2. Blend in the margarine
  3. Add the egg and then the milk and mix thoroughly
  4. Pour the mixture into a greased dish and bake in a medium oven for 45 minutes or until set
