I searched the internet and found the following which may provide some insight to the surname Cuy. The following excerpt is taken from the weblink: http://www.lawphil.net/judjuris/juri1919/mar1919/gr_l-13670_1919.html which involved a property dispute of a deceased Chinese man in the Philippines.....it appears that Cuy is the Mandarin spelling of a Chinese surname which originated in "Amuy" (I believe is in today's Fujian Province in China)......apparently Cuy is spelled Cui in Amuy........
"The interpreter, William Kampton, stated under oath that in the Chinese language "Genaro" and "Hilario" have a similar sign; that "Chang Cuay" could be written as "Chan Cui" or "Chong Cuy;" that the letter "k" can be translated "c"; that the spelling of "Cuy" is of the Mandarin style and that of "Cui," of Amuy; that Po Piak is in the official language and Po Pik in that of Amuy, but that both have the same meaning; and that in Chinese the surname is written before the name, as for example, in Tan Cui the surname is Tan and the name is Cui (record, pp. 268-269)."
