From an article about Lim Ah Hong in Tsinoy.com it said his "surname" was bastardized to Limjoco when he was baptized. This "surname" can be broken down to Lim as his real surname and his personal name as "Jo" which in Spanish is pronounced as Ho, the first syllable of his name Hong. And according to you the "co" signifies being Chinese. Hope that helps.
