The EU probably came from French because the sound is identical to the Cantonese EU in Yeung, Sheung, etc.

The UE (Yuen Long, Tuen Mun) is from German. The u with two dots (or umlaut) is written as ue when the accent mark is not available.

Both UE and EU are not native to English.
