Check out the family associations and clubs he belonged to as well as the people he knew. Chinese communities at that time were very close knit and everyone knew everyone else. More than likely there are people that came from the same village or are distant relatives of your grandfather's in New Orleans.
From you're post, his surname would be Jee or Gee. Confirm with his headstone that he's actually from Hoi Ping and a Jee as many people bought papers to emigrate to the US.
