Cum does not appear to be a Chinese surname, because of the prefix Ah, it is most likely a personal name. Same with Ching and Sing. At this stage you do not have a surname for your ggf's side of the family and your research cannot begin. Sorry for the bad news.
On the other hand if your ggf is buried in Australia and his headstone contains Chinese script then you can further your research.
