Your conclusion Nayon is somewhere in Guangdong, Fujian, Jiangxi and possibly Hunan based on the Jung/Chung surname is not the right lead. It should be based on the English spelling of the complete name which will give a clue to the dialect spoken. In this case it is obviously Cantonese.

As for Nayon, the problem lies in the way it is written, as a complete word, whereas it should be split in two as Nay and On. On is quite a common name for a village place name. But Nay is hard to pin down because it can have more than one meaning. In order to find this place you will need to know whether it is definitely in Jang Sing or not. I did a quite check but did not find anything.

Do you know if your ggf is buried in Australia? If so, have you tried to locate his grave? You may be surprised to find his tombstone may have Chinese script on it which will give you all the information you need.
