Grandma Reynolds Homemade Noodles

Ingredients:
1 cup flour
1/2 tsp baking powder
1/4 tsp salt
1 egg, well beaten
1/4 cup cold water
 

Stir or sift together dry ingredients.  Add egg and mix lightly with a fork.  Add water about 1 tblsp at a time blending with a fork till the mixture holds together in a ball.  Put on a floured pastry cloth.  Sprinkle with flour and flatten with you hand a bit then roll to about 1/8" thick oval shape.  Sprinkle more flour over the dough.  Roll lightly around the rolling pin.  Slide the dough off the rolling pin.  Take a sharp knife and cut into narrow strips.  Unroll the strips and lay across a cooling rack to let them dry for about an hour.

Chicken and Noodles

Ingredients:
1 whole chicken
1 recipe of noodles
1/2 cup cold water
1/4 cup flour
salt and pepper to taste
 

Cut chicken up or buy a chicken already cut up.  Place in a pot and cover chicken pieces with water.  Bring to a boil then lower heat and simmer until chicken is falling off the bone.  Let it cool until you can handle it.  Remove all bones and cut meat into bite size pieces.  You may need to remove some of the broth as there may be too much.  About 4 cups broth would be right.  Bring chicken pieces and broth to a boil add dried noodles.  Boil uncovered for about 20 minutes.  Lower heat to a simmer. 

Mix together four and cold water until smooth by placing 1/4 cup flour into 2 cup measuring cup and add water in a slow stream while stirring with a fork.  Should be the consistency of heavy cream.  Gradually pour the flour water mixture into the simmering chicken and noodles while stirring.  Cook until mixture has thickened.  If you want it thicker add more flour and water mixture.  Salt and pepper to taste.

Bar-B-Q Baked Beans

Ingredients:
1 can Van Camps Pork and Beans
1/4 cup diced onion
2 tblsp brown sugar
1 tblsp yellow mustard
2 tblsp Heinz catsup
2 tblsp molasses
2 tblsp hickory bar-b-q sauce
1/2 tsp liquid smoke
4 or 5 slices bacon

Drain most of the liquid off the pork and beans.  Add remaining ingredients except bacon.  Mix together well.  Top with bacon.  Bake in a 350º F oven for about 45 minutes until bacon is cooked and liquid is bubbling.

Chicken Chow Mein

Ingredients:
1 whole chicken
1 can bean sprouts
3 or 4 stalks celery sliced
1/2 small onion diced
1 small can sliced water chestnuts
1 small can mushroom stems and pieces
1/4 cup Soy Sauce
optional:
3-4 stalks Bok Choy sliced
2-3 tblsp cornstarch
1/4-1/2 cup cold water

Cut chicken up.  Place in large pot, cover with water.  Bring to a boil, lower heat to simmer.  Cook chicken pieces until meat is falling off of bones.  Cool until you can remove the bones.

In a large skillet melt 2 tblsp butter and sauté onion and celery until onion is clear.  Add chicken which has been cut into bite size pieces and about 2 cups broth.  Heat to boiling then reduce to simmer.  Add remaining vegetables and soy sauce heat through.  Thicken with cornstarch mixed with cold water.  Heat to boiling and mixture is thickened to desired thickness.  You may need more cornstarch. Salt and pepper to taste.

Grandma's Goulash

Ingredients:
1 1/2 lbs. ground sirloin or beef of choice.
1 can diced tomatoes
1 small onion
1 small green pepper
1 cup uncooked elbow macaroni
1/2 tsp salt
1/4 tsp black pepper

Directions:  Brown the ground beef in a large skillet.  Add the onion and green pepper and sauté until onion is clear.  Add canned tomatoes and about 1/2 cup water and macaroni.  Bring to a boil, reduce heat to a simmer.  Cover and cook until macaroni is tender.  Serve with a vegetable of choice such as green beans.
