However, Mary J (Jennie) Chase was listed as single in every census that listed marital status (1900-1920).

I also believe Birdie was called Josephine in the 1870 census, 3 years old, born in PA, living with Mary J. Chase (West Finley Twp, Washington County, PA), so Joseph Chase must have been dead before then.
