Laura Checker Board Cake
1 cup sugar
1/2 cup butter
2 eggs
1 cup sour milk
1 small teaspoon soda
2 cups flour
1/2 teaspoon B. powder
2 Tablespoons cocoa dissolved in a little hot water (mix in with the flour)(take part of the batter to color)
add a little more flour
put in round tins with a row of white at edge
then chocolate then white in center
every other row visa versa
use pink coloring instead of chocolate if preferred

1 1/2 cups Apple Sauce
1 good Tablespoon shortening
1 cup sugar
1 egg
cinnamon, cloves, nutmeg

put the cocoa in the hot water 1/2 cup let stand + cool until you get the cake made


Viola Jelly Roll
4 eggs beat
1 cup sugar beat
1 cup flour
1 teaspoon B. P.
little salt + vanilla
spread with jelly and roll


Mabel Kelly Chocolate Cake
1/2 cup cocoa
1 cup boiling water
1/2 cup shortening
2 cups brown sugar
2 eggs
1/2 cup sour milk
little salt
3 cups flour
1 1/2 teaspoons soda
vanilla


Chocolate Icing
melt slowly
2 Tablespoons butter and 2 squares chocolate
bring to a boil
1/3 cup milk
1 cup granulated sugar
cool all about to lukewarm and blend all together
chill this good. put in a bowl + drop in one whole egg
beat with a egg beater 4 min. until about like whipped cream


Filling for Chocolate Cake
1 cup boiling water
2/3 cups sugar
1 teaspoon corn starch
1 teaspoon vanilla


Ruth Seybolt Sponge Cake
1 1/2 cups sugar
1 1/2 cups Swan’s Down Flour (Cake Flour)
1/2 teaspoon cream of tartar
sift three times
beat 4 egg yolks + 2 Tablespoons water
add flour + sugar
1/2 cup boiling water
4 egg whites
vanilla


Nina Chocolate Icing
1/2 cup sugar
3 teaspoons cocoa dissolved in a little hot water
1/2 cup sweet milk
cook then stir in a little butter, little vanilla


No Cook Chocolate Frosting
4 Tablespoons butter or margarine
1/4 teaspoon salt
1 lb. confectionary
5 Tablespoons cocoa
6 Tablespoons milk
2 teaspoons vanilla
beat good


Carmel Frosting
1 1/2 brown sugar
1 Tablespoon butter
1 cup milk
2 teaspoons corn starch
1 1/2 teaspoons vanilla
cook all together in a double boiler until thick and remove from fire and beat stiff + spread on


Filling for Molasses Cake or Cookies
1/2 cup sugar
1 cup seeded raisins
1 cup water
heat stir in a Tablespoon flour or a Tablespoon corn starch with water


Viola’s Lemon Pie
juice with grated rind of 1 lemon
1 cup granulated sugar
2 or 3 egg yolks
3 level Tablespoons corn starch dissolved in a little water
then add 1 1/4 (cups?) boiling water
cook and stir until thick
have crust baked and cooled
beat 2 or 3 egg whites stiff
+ a little sugar
spread on and brown a little


Viola’s Pie Crust
1 cup lard
1/2 cup boiling water
3 cups flour with 1/2 teaspoon B. P.
pour boiling water over lard + beat with fork
mix flour baking powder + salt
let it stand overnight or for a while


Pumpkin Pie
3 eggs
1 cup sugar
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon cloves
1 cup stemmed pumpkin
1 pt. milk
beat eggs
beat mixture
pour in raw crust
bake in a moderate oven


Suet Pudding
1 cup suet
1 cup molasses
1 cup raisins
1 cup sour milk
1 teaspoon soda
1 teaspoon salt
4 cups flour
steam 3 hours


Ice Cream for 1 gal
3 qts. milk
6 eggs
4 cups sugar
cook until thick
1 pt. cream after cooked
flavor vanilla


Mrs. Baker’s Ice Cream
2 qts. milk
1 can pet cream
4 eggs
3 cups sugar
3 Tablespoons flour
flavor
freeze in freezer


Apple Jelly
3 doz. large juicy acid apples
6 lemons
pare + core the apples
add a little water and cover them in a deep preserving kettle
boil until perfectly soft + strain through a flannel bag
1 pt. juice allow 1 lb. sugar boil the sugar and apple juice + the grated rind + juice of the lemons
boil 20 min. skimming when cool + put in glasses
cover with paraffin


Pie Crust
1 1/2 cups flour
1/2 cup shortening + little salt
3 or 4 Tablespoons water to mix


Anna Littell’s Receipt for pies
Will keep in crock or can
1 peck of green tomattoes chopped + let drain
4 qts. apples chopped
2 Tablespoons salt
2 Tablespoons cinnamon
2 Tablespoons allspice and cloves together
2 lbs. raisins
1 lb. currants
6 lbs. brown sugar
1 cup vinegar
cook until thick


Tomattoe Mince Meat
3 lbs. tomattoes
3 lbs. chopped apples
2 lbs. seedless raisins
1 cup ground suet
1 cup mild vinegar
4 lbs. brown sugar
2 Tablespoons salt
2 Tablespoons ground cinnamon
2 teaspoons ground cloves
1 teaspoon ground nutmeg
chop + drain the tomattoes well
makes about 4 pt. in all
cook till thick + clear
put in cans hot
you can add a few cherries and orange peel when you make pies


Emma Chocolate Pudding
1 pt. milk
1/2 cup sugar
little salt
2 Tablespoons chocolate or cocoa
heaping Tablespoon corn starch
cook until thick
flavor


Custard Pie
2 cups milk
3 eggs
1/2 cup sugar
little salt + little vanilla or nutmeg
bake in raw crust

1 layer + cut into
1 egg
1 cup milk
1//2 cup butter
2/3 cup sugar
2 teaspoons B. P. in the flour

Mrs. Simmons Steam Pudding 2 hours
1 cup molasses
1 cup lukewarm water
1 teaspoon soda
some raisins
2 1/2 cups flour some graham instead of all white flour


Viola Brown Bread
1 1/2 cups graham flour
1/4 cup white flour
1/2 teaspoon B. P. in flour
1/4 cup sugar
2 Tablespoons molasses
2 eggs
1 Tablespoon shortening
pinch salt
1 cup sour milk
1 teaspoon soda dissolved in a little hot water
stir well together
pour in tins let raise 1/2 hour
bake slow untill done


Soda Biscuits
2 cups flour
1 cup thick sour milk
2 Tablespoons shortening
1 teaspoon salt
1/2 teaspoon soda dissolved in a little hot water
the dough should be stiffer than for B. P. biscuits


Brown Bread 2 loaves
1 cup white sugar
1 cup molasses
1/2 cup shortening
1 egg
3 cups thick milk
2 cups white flour
2 cups graham flour
1 large teaspoon soda
1 cups raisins chopped
nut meats


Drop Dumplings
1 qt. flour
2 heaped teaspoon B. Powder in flour
salt mix sweet milk
so it can be dropped with spoon
in the broth
boil 15 with cover off then boil 5 min with cover on


Graham Gems
1 cup sour milk
1/2 cup sugar
1 egg
1 large Tablespoon butter or 3 Tablespoons melted lard
1 teaspoon soda dissolved in a hot water
little salt
use graham + white flour to thicken (1 1/2 cups graham flour + 1/2 cup white flour)


Corn Muffins
1 Tablespoon butter
2 eggs
1/2 cup sugar
1/2 cup corn meal
1/2 pt. sweet milk
2 cups flour
3 teaspoons B. P.
little salt
bake in gem tins


B. P. Biscuits
1 qt. flour
2 heaping teaspoons B. P.
2 Tablespoons shortening
salt
enough milk to mix


Laura Lemon Sauce
2 egg yolks
1 cup sugar
butter size of a walnut or 1/2 cup
1 Tablespoon corn starch
beat the eggs and sugar untill light add grated rind + juice of 1 lemon
stir in 1 1/2 cups boiling water + cook


Receipt for White Bread
2 cups scalded milk let
1 1/2 teaspoon salt
2 Tablespoons sugar
2 Tablespoons shortening
1 or 2 compressed yeast cakes dissolved in 1/2 cup lukewarm water
6 to 8 cups sifted flour
enough to make a dough
scalded milk add sugar
salt and shortening + cool
when lukewarm add the salt
yeast add flour to make stiff batter
beating well add flour enough to make a firm dough but not stiff mix + turn on floured
board and knead well out in a greased bowl brush over tops with melted fat cover + set in
a warm place to rise when it is almost double in bulk fold it under and let rise again when
light shape into loaves + put into greased tins let rise untill almost double in bulk bake
into a hot to moderate oven for 50 to 60 min. remove from pans when done.


Mrs. Divvin Banana Bread
3 bananas mashed with a steel fork
1 egg
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon soda
1 teaspoon B. P.
2 cups flour
1/2 cup shortening
1/2 hour in moderate oven


Laura “Johny” Cake
4 Tablespoon sugar
4 Tablespoons shortening
1 egg
2 cups buttermilk or sour milk
2 teaspoons soda
2 cups corn meal
1 cup flour + little salt


Laura Pineapple Cookies
1/2 shortening
1/2 cup white sugar
1/2 cup brown sugar
1 egg well beaten
1/2 cup drained pineapple
2 cups flour
1/4 teaspoon soda
1 teaspoon B. P.

350 degree oven

2 cups sugar
1 cup butter

1 cup shortening
1 cup sour milk or water
2 eggs
pinch salt
1 Tablespoon ginger
1 Tablespoon soda in a little hot water
flour to roll or pat down


Graham Cookies
1 cup sugar
1 cup sour cream
1 egg
scant teaspoon soda
2 cups graham flour
pour in a baking tin
when done cut in squares

Laura Pineapple Sponge Cookies
1/3 cup shortening scant
2/3 cup white sugar or brown
1 egg
1/4 teaspoon lemon
1 heaping cup flour
1/4 teaspoon soda in flour
little salt
1/4 cup crushed pineapple
350 degree oven


Old Time Soft Ginger Cookies
1/2 cup boiling water
1 cup lard or other shortening
2 cups molasses
1/2 teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
2 teaspoon soda
4 cups sifted flour
beat lard, molasses + water together
then put together
drop from spoon far apart on greased cookie sheet
batter is very soft
bake in oven 450 degrees 8 min.


Mrs. Kloff Molasses Cookies
2 eggs
1 1/2 or 2 cups brown sugar
1 cup molasses
1 cup lard
1 Tablespoon soda in 1 cup hot water
1 teaspoon ginger
1 teaspoon cinnamon
5 or more cups flour heaping


Aunt Getts Molasses Cake
1/2 cup granulated sugar
1/2 cup molasses
2/3 cup cold water
1 egg
1 Tablespoon butter heaping
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon soda
1 2/3 cups flour


Corda’s Delaware Cry Babies
1 cup molasses
1 cup sugar
1 cup shortening
1 egg
1 cup thick milk
1 level Tablespoons soda
1 teaspoon cinnamon
1/2 teaspoons ginger + cloves
1 cup raisins
5 cups flour small
drop from spoon in a greased tin
bake rather hot oven


Mrs. Eleanor Coon’s
Fried Cakes with Potatoes
2 cups mashed potatoes
2 cups sugar
3 eggs
1 cups sour milk
5 Tablespoons melted shortening
4 teaspoons B. P.
nutmeg + vanilla
4 cups flour


Mrs. Eleanor Coon’s Butterscotch Cookies
2 cups brown sugar
2 eggs
2 cups thick milk
1 scant cup of butter + lard mixed
3 teaspoons B. Powder
1 teaspoon soda
1 teaspoon vanilla
4 cups of flour or a little more
drop from a spoon


Violet Smith’s Icicle Pickles
very good
2 gals cucumbers sliced lengthwise
1 pt. salt
1 gal. boiling water
let stand in a cool place one week
Drain stir often in meantime
pour on 1 gal boiling water
let stand 24 hours
drain
pour over one more gal boiling water
with chunk alum size walnut let stand 24 hours
drain + boil together 2 or 2 1/2 qts. vinegar dilute if strong
6 pints sugar
mixed spices
pour over pickles hot + repeat for 4 mornings
pickles will get real soft but will come out O.K.


Sacharine Pickles in Crock
1 gal strong vinegar
1 pt boiling water, let cool
1/2 cup ground mustard
1/2 cup salt
1 dram sacharine powder
1/2 teaspoon alum
stir well + often
wash + dry small pickles before putting in
put in crock as you get them


Fannie Drake Baker receipt for Sacharine Pickles (a qt. can)
1 qt. strong vinegar
1/8 teaspoon salt
1/8 teaspoon sacharine
1/8 teaspoon ground mustard
2 teaspoons pickling spices
have small pickles washed + dry


Chili Sauce
1 peck ripe tomatoes
6 green peppers
6 onions
2 teaspoons ground cloves
2 teaspoons ground cinnamon
2 teaspoons ground allspice
2 cups brown sugar
5 cups vinegar
salt to taste
chop peppers and onions
put all together
boil two hours


Fannie Drake’s Prepared Mustard
1 egg
1/2 cup sugar
1/2 cup cream
1/2 teaspoon mustard
piece of butter size of an egg
1 teaspoon salt
2 teaspoons corn starch
cook until thick


Florence Crans Sliced Cucumbers Pickle
4 qts. sliced cucumbers
4 qts. green tomatoes sliced
1 qt. onions sliced
good handful salt
let stand overnight
then scald + drain
syrup 3 lbs. brown sugar
1 teaspoon turmeric
2 teaspoon ground mustard
1 oz. celery seed
1 oz. mustard seed
2 qts. vinegar


Dill Pickles
1/2 cup vinegar
1 1/ cup water
1/8 cups salt
pinch alum
3 dill blossoms


Harvard Beets Lida Price
12 small beets washed + cooked
until soft remove skins
and cut beets in small cubes
1/2 cup sugar
1/2 Tablespoon corn starch
1/2 cup vinegar + let boil 5 min. add the beets + let stand on back of stove 1/2 hr.
just before serving all 2 Tablespoons butter


Indian Relish (good)
12 sweet peppers
12 green peppers
12 cucumbers
peel cucumbers + chop
add two small handfuls salt
stir well let set 2 hrs. + drain well
add 3 pt. vinegar
3 pt. sugar
4 level Tablespoons celery seed
4 level Tablespoons mustard seed
stir well
can cold


Viola Welch Rare bitt
1 Tablespoon butter
1 Tablespoon flour
1 cup milk
1/2 teaspoon salt
little pepper
1/4 teaspoon mustard
1/4 to 1 lb. cheese shaved or cut fine
for 6 slices of toast
make the white sauce in the top of a double boiler
set the top of the double boiler over hot water
but not boiling water
add the cheese cook + stir
until it is melted serve on hot toast or saltines


Cora Baker’s Pimento + Cheese Sandwich
cook 1 cup sweet milk
1/2 lb. cheese
1 teaspoon salt
cook over hot water until very thick
then add 1 Tablespoon flour + cool
when cool add a 10 ct. can of Pimentoes chopped fine


Em’s Cabbage, sour or sweet
1/2 cups of cream
2/3 cups sugar
2/3 cups vinegar, if strong, not so much
salt + pepper to taste
1 Tablespoon flour
heat
add cabbage + heat again
cool little
