Day-care Bread

2 teaspoons sugar
1 cup warm water
4 tablespoons (4 packages) dry yeast
3 cups milk
1 cup shortening or butter
1 cup sugar
4 tablespoons salt
9 cups warm water
1 cup bran, wheat germ, or corn meal (optional)
10 pounds flour


Makes 12 loaves
Dissolve sugar in warm water.
Sprinkle yeast over water (set in warm place).
Heat milk and shortening till melted.
Put milk mixture in large bowl.
Add sugar, salt and water.
Stir and add yeast to mixture.
Add bran (optional).
Add up to 10 pounds flour, gradually stirring well after each few cups.
(Stirring helps yeast rise.)
Knead till not sticky.
Place in greased pan to rise till doubled, covered with towel in warm place.
Punch down and knead again.
Shape in loaves (12), let rise till doubled.
Bake at 350�, 15-20 minutes for rolls, 30-45 minutes for loaves.

One of my fondest memories of childhood was when the price of a loaf of bread increased to an outrageous price over 25�. My father pledged to never buy bread again, and for awhile spend several hours a week baking bread for the family. Unfortunately it only lasted a few weeks, but the memory will always be cherished.
