Christmas Cookies

1/3 cup soft shortening
1/3 cup sugar
1 egg
2/3 cup liquid honey
1 teaspoon lemon favouring
2 3/4 cups flour
1 teaspoon baking soda
1 teaspoon salt


Combine shortening, sugar, egg, honey, and lemon favouring and mix thoroughly.
Combine flour, soda, and salt and add to sugar mixture.
Chill dough for 1 hour.

Roll out and cut into Christmas forms.
Decorate with coloured sugar, nuts or peel.
Bake on a lightly greased cookie sheet at 375� for 8-10 minutes.

A heritage recipe used in a local museum (Glanmore, Hastings County Museum, Belleville). Sometimes the older the better. This cookie is a family favourite because of it's almost cake like texture, best eaten fresh, but still good after a few weeks in the freezer.
